Cheesecake Cupcakes with Chocolate Swirls

mini cheesecake cupcakesBelieve me or not, I have discovered mini cheesecake cupcakes only three or four  months ago. Don’t get me wrong, I knew that they exist. I saw many beautiful images and recipes on internet (see this famous raspberry swirl cheesecake cupcakes by Annie’s Eats)  but I had never tried to make them! And when I finally decided to make them this was real revelation for me and my husband! We were absolutely amazed by the taste of these delicious cheesecake treat. This yummy cupcakes has become one of our favorite desserts ever! So here is my ordinary recipe for mini cheesecake cupcakes with chocolate swirls! I hope you’ll enjoy.

Cheesecake Cupcakes with Chocolate Swirls

 

Cheesecake Cupcakes with Chocolate Swirls

Chocolate Syrup

  • 1 1/2 tablespoon of sugar
  • 3/4 tablespoon of cocoa powder
  • 1 tablespoon of water
  • Dash of salt

1. Mix all ingredients in a saucepan and cook one minute when it starts to boil. Stir well while it’s cooking, just be careful it will bubble a lot.
2. Cool it
3. If you have leftovers you can store it in the fridge

Cheesecake Cupcakes with Chocolate Swirls

Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 4 tablespoons melted butter,
  • 4 tablespoons sugar
  • 2 lbs cream cheese
  • 1 3/4 cups sugar
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 4 large eggs, room temperature

The crust:

  • Preheat the oven to 325F and line pans with cupcake liners
  • Mix together graham cracker crumbs, melted butter and 4 tablespoon of sugar until all become moist.
  • Put one tablespoon of the mixture for the crust into each cupcake liner and flatten with the bottom of the glass to make smooth surface.
  • Bake in the oven for 5 minutes, remove from the oven and set aside until you mix the filling

Filling:

  • Beat together the cream cheese and sugar until it’s smooth.
  • Add vanilla and salt and mix.
  • The eggs add one at a time, until combined but use low speed and do not over mix it.
  • Place 3 tablespoons of the filling  into each cupcake liner over the crust
  • Add a few drops of chocolate syrup over the each cupcake and using a toothpick make the swirls.
  • Bake for about 20 minutes.
