Ghost Cupcakes – Red Beet and Purple Ube Flavors
I’m Michelle from the blog Sugarswings! Serve Some. I’m so happy to be here at Cupcakes Garden sharing my favorite cupcakes and just in time for Halloween! First a little about me! A couple years ago I started writing to share my love of baking and found it’s a great way to allow my creative side some expression, usually in the form of cupcakes and sweets for my kids and family. Being a working mom of 2 boys and a girl – I love coming up with neat ideas to make them smile and I usually try to share the how to’s for most of the projects featured. Unique cupcake ideas and flavors are often spot lighted. There is also a fair amount of pop culture and geek infused within Sugarswings! Serve Some (star wars and superhero fans I’m looking at you!) as well as some healthier treats sprinkled in here and there too. Hopefully there is something for everyone!
So onto the cupcakes! Who likes unusual flavored desserts? (me, me, me, and me!) I really do like incorporating different flavors into sweets and these red beet and ube cupcakes, which are part of this group of cupcakes.
If you are interested in the butternut squash cupcake, the recipe is here from beantown baker (although I used roasted butternut squash and scooped out the flesh instead of grated squash and used a bit more so i’m guessing that’s why the color is a little deeper and consistent). The maple cinnamon cupcake is just plain vanilla box cake with some cinnamon and maple syrup added. The avocado post is here.
I wanted to keep the frosting simple so just added a little cool whip to look like ghosts and melted some black candy melt for ghost features. So easy!
Thanks very much to Vera for having me guest post over here at Cupcakes Garden, it’s been a lot of fun. I really do hope you like these different flavored cupcakes. Please come by and visit soon!
