Sweet Potato Almond Cupcakes frosted with blue coloured Almond Cream Cheese and decorated with lovely white chocolate snowflakes are delicious winter treat. This recipe use apple cider vinegar to get the fluffy texture, instead using eggs, so it’s perfect for those who are allergic to eggs.
The cupcakes are very moist, fluffy and not too sweet. They have great aroma of sweet potato and a hint of the cinnamon, and almond flavored frosting goes very well with it.
White chocolate snowflakes will be great idea for Christmas or New Year cupcakes decoration.
