Vanilla Bean Meringue Cupcakes with Strawberry Rhubarb are delicious treat, adapted from Martha Stewart’s recipe. These are amazing vanilla bean meringue cupcakes crunchy outside but soft inside. The cupcakes are sliced in half and filled with the strawberry rhubarb compote and sweetened whipped cream.
The white colour of vanilla meringue cupcakes and whipped cream match great with dip red colour of the strawberry compote.
